Cherry liqueur
Enjoyed in front of a lovely little bar in Setúbal whose name we have forgotten
Approx. 1 bottle
ingredients
450-500 g sour cherries (morello cherries)
100 g white rock sugar
4.5-5 dl vodka or white grappa

preparation
Prick the washed and stemmed cherries with a fork and place in a bottle. Add sugar and vodka and seal tightly. The bottle must be stored in a cool and dark place for at least one month; in between it should be shaken again and again. The liqueur is served together with the pickled cherries.
Gourmet tip
If you like Christmas spices, boil 3 cloves, 1 anise star, 1 cinnamon stick and a sliced orange with 1.5 dl water and the rock sugar to a syrup. After the syrup has cooled and the spices including the orange have been removed, the bottle can be refilled.
