Quiche with goat cheese and chives

Ingredients for the dough, if you want it to be homemade
130 g of wheat flour
100 g whole wheat flour
1 egg
60 ml of olive oil
50 ml of water
little salt

Ingredients for the filling
1 large bunch of chives
some leaves of Peterli
3 eggs
200 g fresh goat cheese
1.5 dl milk
1 pinch of chilli flakes
salt and pepper

preparation
For the dough, mix the flour, eggs, olive oil, water and salt and knead the dough for 5 minutes, then let it rest for 15 minutes.
Chop the chives and parsley (set aside a little for decoration). Mix eggs, goat cheese, milk, herbs and chilli flakes and season with salt and pepper.
Roll out the dough, prick with a fork, place in a mold and pour in the filling. Bake for about 25 minutes at 180/200 ° C.
Gourmet tip
Depending on the season, replace the chives with wild garlic, asparagus, spinach or pumpkin. For those who like it sweet: figs or pears (plus walnuts) are also a great alternative.
